Barbecue recipesWelcome to our recipes page. Here you will find recipes for rubs, sauces, and marinades. Since we haven't gone over the differences between the three, we will do that now. A rub is usually a combination of different spices that are sprinkled or rubbed into the meat prior to bbqing. Look over the recipes that follow. Notice you will not find sugar in a lot of them, or a lot of sugar in any of them! Sugar when cooked, will basically crystallize and form a burnt crust on your meat. Which brings us to sauces. You learned about sauces and the different varieties in different BBQ regions. Sauces are usually applied to the meat in the last 30 minutes of cooking. The sauce is usually brushed on several times during the last phase of cooking. Remember what we said about the sugar? You got it,...put the sauce on too soon, and the sugar within will crystallize and burn! Marinades also differ from region to region. Usually meat is marinated for several hours prior to cooking. You may use any of the flavoring methods, or you may use a combination of them. Let you imagination run wild.
